For Hop & Barrel Brewing Company co-founder Justin Terbeest, the opening of the company’s second brewery location in Spring Valley, Minnesota, is a return to his roots.
As a Spring Valley native, Terbeest hopes that the new brewery will attract more people to his hometown as well as encourage connection within the community of just under 2,500 people.
“A brewery gives folks a reason to visit and see what else Spring Valley has to offer,” says Terbeest. “We want the brewery to bring people together.”
Hop & Barrel Brewing Company opened in Hudson, Wisconsin, in 2017 and quickly became a town staple. Four years later, they’re officially expanding their operation with their southeastern Minnesota outpost, Hop & Barrel Brewing Spring Valley opening on November 20.
The idea of opening a second location arose in early 2021. Two Spring Valley business owners and friends of Terbeest approached the Hop & Barrel co-founder with the idea of opening a brewery in a building they were thinking of purchasing.
“We toured the location and we fell in love with the space,” Terbeest shares.
After months of preparation and work, Terbeest and the rest of the Hop & Barrel team are opening the doors to their 3,000-square-foot brewery, 2,000 of which is the seating area. There’s a spacious bar that’s perfect for playing games, connecting with one another over a cold pint, or enjoying live music. The taproom will be optimized for sound quality, as live music, open mic nights, and comedy will be a major focus of this new location.
The inside is primarily brick and black with accents of the classic Hop & Barrel green. According to Terbeest, there will be a plethora of seating options available.
“We will have a lot of seating—high tops, swivel tops, low chairs—this allows us to be more welcoming and inclusive. The more types of seating we have, the more types of bodies can be comfortable here!”
In the brewery, Hop & Barrel Brewing Spring Valley will be running a 2-barrel SABCO brewhouse and an Ss brand cellar system. Jason Pahl, who previously brewed at South X Southeast Brewery and Grand Rounds Brew Pub, will be head brewer at the Spring Valley location.
Hop & Barrel’s Spring Valley tap list will differ from the beers on offer at their original Hudson location. From a red hazy IPA to what Terbeest refers to as “the Busch Light of craft beer,” they plan on offering a diverse list of beverages, giving Spring Valley its own unique flavor. With eight tap lines, two slushy lines, and multiple flavor shots for the seltzer, they hope to have something to please every beer-drinker and beverage enthusiast alike.
“In about a year, we’re going to have Pedio-Lacto mixed fermentation sours,” Terbeest adds excitedly. “We don’t have to worry about distribution, so we can experiment with sours and a lot of different things.”
Although Hop & Barrel Brewing Spring Valley won’t be distributing, they will be offering Crowlers to go. Additionally, a few of its experimental beers may end up on tap at the Hudson location for Wisconsinites to try, as well.
Hop & Barrel Spring Valley will have a soft opening on November 17, 2021. The brewery’s grand opening on November 20 will represent all-things local. There will be local food from Howard Brothers Barbeque and live music from local musicians Zeb and The Amateurs.
“We’re a community center that sells beer, and now has music,” Terbeest says. “We just want people to come to connect, enjoy our beer, and spend time in Spring Valley!”
